Mozzarella cheese is a popular Italian cheese that is known for its stretchy texture and mild flavor. – 1 gallon of whole milk (not ultra-pasteurized)
– 1/4 cup of citric acid powder
– 1/4 cup of salt
– 1/2 cup of water

– A wooden spoon or cheese spatula

Step 1: Prepare the Citric Acid Solution

In a small bowl, mix 1/4 cup of water with 1/4 cup of citric acid powder. Stir until the citric acid is completely dissolved.

Step 2: Heat the Milk

Pour the gallon of milk into a large pot and heat it over medium heat until it reaches a temperature of 90°F (32°C). Stir the milk occasionally to prevent it from scorching.

Once the milk reaches the desired temperature, slowly stir in the citric acid solution. The milk will start to curdle and form lumps.

After 5 minutes, pour the curds into a colander lined with cheese cloth or a clean kitchen towel. Gather the ends of the cloth and twist them to squeeze out as much liquid as possible. Once the cheese is as dry as you can get it, shape it into a ball or log using your hands.

Step 9: Salt the Cheese

Unwrap the cheese and sprinkle it with salt. Rub the salt into the cheese to coat it evenly.

Step 10: Store the Cheese

Place the salted cheese in a container and cover it with plastic wrap. Store it in the refrigerator for at least 4 hours before serving.
